Easter Bunny Biscuits

These Easter bunny biscuits are wonderfully simple for children to help make, as well as being really delicious.

They would make great Easter gifts and perfect for spring-themed birthday parties!

Before you start, here's a Spring-themed bookmark to download and print out which children can colour in whilst they wait for the biscuits to bake!

SPRING-THEMED BOOKMARK TO COLOUR IN  

All the ingredients for Easter bunny biscuits set out on a work surface.

Ingredients: (makes about 22 biscuits)

  • 250g unsalted butter, softened
  • 150g caster sugar
  • 1 medium egg yolk
  • 2 teaspoons vanilla extract
  • 375g plain flour
  • 4 tablespoons of icing sugar
  • chocolate drops and mini marshmallows, to decorate

Method:

  • Put the butter, sugar, egg yolk and vanilla extract in a large bowl.
  • Mix everything together well using a wooden spoon or handheld mixer.

  • Add the flour. Bring the mixture together with your hands. Knead it to make a smooth, firm dough.
  • Wrap in clingfilm and chill in the fridge for 30 minutes.

  • Preheat oven to 190⁰C/Gas Mark 5. Grease & line 2 baking trays.
  • Sprinkle a clean work surface with a little icing sugar and roll out the chilled pastry to a thickness of 0.5cm. Cut out the biscuit shapes with a cutter.

  • Place the biscuits onto the baking trays and bake for 6-7 minutes or till lightly golden.
  • Leave to cool on the baking trays for a few seconds before transferring to a wire rack to cool completely. The biscuits will harden as they cool.

  • Mix 4 tablespoons of icing sugar with a few drops of water to form a thick icing.
  • Use the icing to stick on chocolate drops for the eyes and mini marshmallows for bunny tails.
