Norwegian Apple Cake

Here's a lovely and tasty apple cake recipe. It's easy to make and delicious hot or cold!

Bramley cooking apples

Serves: 9-12

Ingredients:

  • 3/4 cup margarine or soft butter
  • 1 cup sugar
  • 11/2 cups self raising flour
  • 2 eggs, beaten
  • 4 apples (cooking or eating)
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar

Method:

  • Heat oven to 180⁰C/Gas Mark 4. Grease & line a 9"/22cm cake tin.
  • Cream the sugar and butter together till light and fluffy.
  • Add the eggs and then the flour, bit by bit, and mix well after each addition.

  • Pour cake mixture into the cake tin.
  • Peel and slice apples.
  • Place slices closely together on top of the cake mixture.

  • Mix sugar and cinnamon together and sprinkle over the apples.
  • Bake for about 60 minutes, till well risen and golden.

  • Leave to cool in the baking tray before cutting into squares.
