Here's a lovely and tasty apple cake recipe. It's easy to make and delicious hot or cold!

Serves: 9-12
Ingredients:
- 3/4 cup margarine or soft butter
- 1 cup sugar
- 11/2 cups self raising flour
- 2 eggs, beaten
- 4 apples (cooking or eating)
- 1 teaspoon cinnamon
- 1 tablespoon sugar
Method:
- Heat oven to 180⁰C/Gas Mark 4. Grease & line a 9"/22cm cake tin.
- Cream the sugar and butter together till light and fluffy.
- Add the eggs and then the flour, bit by bit, and mix well after each addition.

- Pour cake mixture into the cake tin.
- Peel and slice apples.
- Place slices closely together on top of the cake mixture.

- Mix sugar and cinnamon together and sprinkle over the apples.
- Bake for about 60 minutes, till well risen and golden.

- Leave to cool in the baking tray before cutting into squares.
