Looking for Hallowe'en party food ideas? This spooky Hallowe'en yoghurt bark is a delicious snack, as well as being fun to make and healthy to eat. Win win!
Spinach creates the green spooky colour and honey or maple syrup sweetens the yoghurt. You could use a variety of your favourite fresh or dried fruit too.
You will need to freeze the yoghurt bark for at least 4 hours or preferably overnight. I used a 22cm x 22cm tin and the yoghurt bark was about 1.5cm thick. You could, however, use a slightly larger tin. The only difference would be the thickness of the yoghurt bark but it'd still work well!
Ingredients:
- 2 ½ cups plain yoghurt
- 3 tablespoons honey or maple syrup
- 1 cup fresh spinach, packed
- 1-2 kiwi, peeled and sliced into moon shapes
- ⅓ cup mandarin oranges, drained
- ⅓ cup frozen pitted cherries, cut in half
- 2 tablespoons edible eyes
Method:
- Line a baking tray with greaseproof paper. (I used a 22cm x 22cm baking tray.)
- Put the yoghurt, maple syrup and the spinach in a blender and blitz till smooth.
- Pour the yogurt mixture onto the baking tray. Spread it evenly.
- Arrange the fruit toppings and sugar eyes on the mixture.
- Freeze the mixture for at least 4 hours, preferably overnight.
- Once frozen, remove the tray from the freezer and break up the yoghurt bark into jagged pieces.
